next time you cook something, take a picture of the ingredients before you start and the finished product. i guarantee it will be satisfying.

Chicken, Brocolli, Red Pepper, Scallions, Ginger, Garlic, Cilantro, Cumin, Nutmeg, Chili, Sesame Seeds, Lime Juice, Soy Sauce, Palm Sugar, Pepper, Salt, Rice. Not in any particular order.

Here's the after picture of my strawberry cupcakes with dark chocolate icing that were supposed to be for a bake sale, but due to a series of mistakes in the mixing and cooking process they ended up in the reject pile I took to work.
If this thread had been a week earlier I would have taken before pictures.

It's true! I always put things in neat piles on the cutting board and have all my ingrediants out before I start cooking, but I must admit that I neatened things up a bit to try to impress you guys.

I do that too it's so fun. A lot of times I'll put them all in their own seperate appropriately sized bowls, just like on the cooking shows. |

I line up all my ingredients like that too, and then I put them away as I use them so I never lose my place or accidently put in salt twice or something. I forget who taught me to do it that way.
I've got a friend who's a chef and she always lays out all her ingredients in their own bowls and jars and takes pictures before and after. She's one of those freaks who don't need to measure their ingredients. |

I'm one of those freaks!
There really is just something so satisfying in having a nice pile of whatever ingredient you are using, sliding the edge of my kitchen knife under it to pick it up, then dropping it in the pan. |

Hope none of you are on dial-up!
All the ingrediants, roughly left to right: palm sugar, salt, coconut milk (unsweetened), scallions, broccoli, fish sauce, lime juice, garlic, soy sauce, chicken, red curry paste, curry powder, tumeric, cumin, coriander, nutmeg, cardamom, pepper, jasmine rice
Spices:
Scallions, broccoli, garlic
Simmer the coconut milk, add the curry paste
Spices added, chicken and scallions added
In goes the broccoli!
Finished product

That looks great, but I see green onions, not shallots. Given there is garlic already, though, green onions is probably better. |
