For pastries and other cookable items. Not for literature. As long as the ingredients are obtainable, I will find them, find the best recipes I can, give you my version of that recipe, plus pixx, plus the actual food (if it is mailable or if you live nearby).
Nothing is off limits I have an ice cream maker, a food processor, a dutch oven, a steamer, etc etc the possibilities are endless.
I just haven't cooked much new stuff recently and I want to try new things. |

2. make ice cream
3. cut the bagel in half and toast it.
4. SMEAR THE ICECREAM ONTO THE BAGEL AND eAT IT IT LIKE A SANDWICH |

A long time ago when I was a kid, my mom made Captain Chicken. It had a red sauce. Other than that I don't remember what was in it, but I do remember it being incredible. My mom lost the recipe, and died a while later while I was in college. Help me out! |

tomorrow I am going to make bagels since I already have everything I need. A few regular bagels, a pumpkin bagel (to match the pumpkin ice cream), and maybe some egg bagels. |

it can't be THAT hard, I've done them myself (the only difficult part is getting the shape right imo and that's not too important) |

THESE BAGELS ARE AMAZING. They are the softest bagels I have ever had in my life so delicious. Will post pics + recipe soon. I've never done bagel+ice cream before but it worked well. Does anyone want some (srisly I will save some) |

they keep really well in the freezer but I am not spending the money to send them frozen. Only real option is if you live nearby I can deliver them.
Here is the recipe I used. These bagels are really super soft, and are delicious plain, with a little salted butter, or cream cheese. I think if I try the ice cream thing again I'll put the bagel in the toaster first to give it some crunch.
Plain (makes
1 packet highly active yeast
2 t brown sugar
2 t molasses (or just use 1 t brown sugar)
1 1/2 C warm water
4 C bread flour
1 t salt
some cornmeal (or flour is fine)
2 t baking soda
Pumpkin (makes 6)
1 packet highly active yeast
4 t brown sugar
1/2 C warm water
1/2 C pumpkin (canned or fresh. i used fresh frozen)
3 C bread flour
1/4 t each of: allspice, cloves, cinnamon, nutmeg (this is up to your discretion. depends on how much you want these tasting like pumpkin pie)
1 t salt
some cornmeal (or flour is fine)
2 t baking soda
Plain: In a large bowl, mix the yeast, sugar, and molasses and let it sit for a couple minutes so the yeast can get to work. Then mix in the salt and flour using a spatula/your hands. It's going to be stickier than most doughs but that's fine, as long as it isn't so sticky you can't pull it off your hand. If it's like that, just add in a little more flour.
Pumpkin: Basically the same thing, but add in the pumpkin and spices before adding the flour and salt.
Alternatively: if you have a bread machine or kitchenaid with a dough hook just throw the ingredients in there and let it go for about 15-20 minutes. I did that with the pumpkin ones using my kitchenaid.
After it's all mixed up, knead it for about 10 minutes, then leave it in the bowl, covered with a damp cloth. Set that aside for 1-2 hours.
Once that is done rising, use a clean, lightly floured board or counter, and cut the dough into 8 (6 for pumpkin recipe) pieces. Roll these each into a ball, and then using your thumbs, pierce a hole in the middle. Then just kinda work it into a nice loop.
Preheat your oven to 425 degrees (or 450 if you want harder bagels), and prepare a large baking sheet by sprinkling it with cornmeal or flour or unseasoned bread crumbs.
Using a large pan (or a pot, but it will take a little longer), dissolve the baking soda and a little honey (optional) in a bunch of water. Bring it to a fast boil, and then drop a couple bagels in at a time, making sure to keep them from touching each other. Boil them for about 2 minutes on each side and then set aside til you're ready to put them on your baking sheet.
Once they're all done boiling, put them on the middle rack of the oven for 15 minutes, then take them out and let cool for a bit. It's bagel time!

Put far too much effort into these mediocre pastries. Even had to go back to the supermarket because the dark rye flour I bought had moth larva in it.
Here is my decoding of that awful recipe, which I have halved because I did not want 20 of those things:
Filling
* 1 C + 1 Tbsp water
* 2/3 C short-grain rice
* 2 C milk
* 3/4 teaspoons salt
Crust
* 1/3 C + 2 Tbsp cold water
* 3/4 C rye flour
* 1/3 C wheat flour
* 3/4 tsp salt
Basting
* a little less than 1/4 C milk
* 1 3/4 Tbsp butter
Egg-butter spread (munavoi) -- I would not recommend this it kinda sucks hard. Just eat it with cottage cheese or butter.
* 1 egg
* 1 3/4 Tbsp butter
* 1/8 tsp salt (optional)
* 1/3 C cottage cheese (optional)

Filling
1. Mix the rice into boiling water. Boil until almost all of the water is gone.
2. Add the milk and stir the filling for a few minutes, til it starts to steam. Reduce heat and stir the porridge occasionally. The cooking time is about 40 minutes. While that's going on, you should make the dough
3. When the porridge is ready, it will seem thickish. Then add the salt. Cool the porridge.
Crust
1. Mix the flours and salt into the cold water.
2. Make the dough smooth and pliable by moulding it by hands on a panification support. (editor's note: I don't know what the hug a panification support is so just use your hands or a cutting board or whatever). Just knead it for 5-7 minutes til it gets really smooth and you can make it into shapes.
3. Shape the dough into a smooth bar and divide it into ten pieces.
4. Roll the pieces into balls, flatten them into small cakes and cover them with plastic. (You don't have to cover them with plastic. It will keep them from sticking to your rolling pin but it makes it harder to roll them).
5. Roll the cakes into thin sheets that have approximately 17 cm (~6 1/2 inches) in length.
Baking the pastries
1. Lay porridge on each cake so that the porridge reaches the ends. Should be about two large spoonfuls for each one.
2. Pinch the edges over with your fingers.
3. Bake the pastries in about 475 degrees F for 15-20 minutes or until you start to get a browning on the rice porridge.
Finishing
1. Moisten the pasties from both sides with hot mixture of milk and butter.
2. Pile the pastries up inside a pot or a pan and cover it up for a little bit so they can steam.
3. If you want to make that munavoi (don't), hard boil the egg (~12 minutes), then use a whisk to mix it up with the butter/cottage cheese til it becomes spreadable.
They're kinda tasty but not at all in the way that I hoped for them to be. I think I just need to find a magical spread to put on them that will make them amazing (nutella? cinnamon butter? apple butter?). Also I think the rice pudding should've had sugar and cinnamon in it. |
