I disagree, I think it can go bad. There is a bottle of it in the break room at work that is p crusty looking and has been there 3+ years (it was there when I started)

I will try honey lemonade because it sounds fantastic.

Those crystals are just like, dried honey. Heating it will return it to a liquid state. Honey just naturally separates. Sealed honey might crystallize a bit but it's fine. Honey can also ferment into a more watery liquid in humid places, which is I think how you get mead.

They've found honey in Egyptian tombs and eaten it. And really it's like 84/16 sugar/water, which is pretty hard to spoil.

I probably still wouldn't eat old honey from the break room though.

honey and peanut butter sandwhiches- where you let the honey kind of soak into one piece of bread just a bit and put peanut butter on the other piece of bread, i would say rivals peanut butter and jam in deliciousness.

My family has pretty much never ever ever used honey in any kind of food thing. Except for the hot lemon and honey thing for when your sick, but that's it.

I guess my point is I've gotten this far in life quite alright being mostly ignorant to the details regarding honey and how it works, but I forget how that's actually relevant to the discussion.
