the other day we had garlic rosemary potatoes. They were chopped up similar to how you would chop them for fried potatoes, put in a bowl with some butter (not melted, but room temperature) and chopped garlic, a bit of salt, pepper, and fresh rosemary leaves (we have a really beautiful rosemary plant growing in our kitchen), mixed by hand so the butter gets smooshed around to coat each potato, placed on a baking sheet with a chunk of butter in the middle to melt while cooking and then just baked in the oven until crispy. Super simple and very tasty.

I have the NYE potato soup in the slow cooker because it's really cold outside and a perfect soup day. I'm looking forward to it! This soup has:

6 c diced potatoes
2 c diced onions
1/2 c sliced celery (I used more, probably a cup)
1/2 c sliced carrots (again, probably about a cup)
5 c water
4 chicken bullion cubes
1/4 c butter
3+ strips of crumbled, cooked bacon
salt n pepper

cook it on high for 7-8 hrs and at the end you stir in a can of evaporated milk and a cup of your cheese of choice. The recipe also called for parsley but I don't like it so I left it out.

EDIT: It's amazing.

Scuba, and everyone, these potatoes are amazing and incredibly filling (like, a half a potato with a full meal or with many other types of potatoes is totally plenty but they are so good that sometimes I skip the other foods in the meal just to eat an entire potato).

also fried potatoes are great
and mashed potatoes are great
my boyfriend made mashed potatoes with french onion soup (but no cheese or croutons) a while ago, those were super great
french fries are pretty great unless they are too salty and that is not the fault of the fries.

my least favorite potato is potato chips and those are still pretty good if they aren't too salty or greasy.


Wow, I agree with everything you said 100%. Even plain baked potatoes are really good in my opinion. Sometimes, I will just have baked potatoes and broccoli for a meal.

I've been eating baked potatoes a lot recently
Or really
Microwaved potatoes using the "baked potato" setting

I wash the potatoes
Put coarse salt on them while they're still wet and roll them around in it
Microwave them on a plate and under an upside down plate
Then I
Gash them and mess them up a bit
Put butter in there
Cram in some lil slices of asiago
Put it back in the microwave for 40 seconds
Then put sour cream on top
And freeze dried chives on top of that

And this sounds like a crappy recipe
But
It's extremely cheap, quick, and I could eat it every day

More potato news:

I have decided that the pouches of instant potatoes are really the way to go with that mashed potato hamburger casserole I make, mostly for convenience and consistency's sake.

I remembered it because my boyfriend asked me if I knew how to make my mom's potato salad because he wants me to make it for a cookout.

SO, between Erica and I, we hit the potato lotto... I stopped by the food pantry on Monday to get potatoes for our family's Memorial Weekend potato salad and got a 10lb bag (only about 6lbs were good, though). Erica stopped by on Tuesday and they gave her TWO 10lb bags. Plus she had already gotten potatoes. So.
We Have Potatoes. A similar situation has occurred with loaves of bread and packages of hotdog/hamburger buns. We did not coordinate very well, I guess.
