In my experience, red taste more sweet and acidic, with green on the other end of the spectrum, and yellow and orange in between

green are the worst/cheapest
yellow/orange are okay for flavor but red is where it's at
i think the vitamin you're looking for might be lycopene, prevents a lot of kinds of cancer

green bell peppers are a vital component of chili

you can use the other colors, but it won't come out quite right.

I prefer green ones, since they seem to have a different texture and tend to be crisper/jucier. I usually eat them fried in something. I don't know what red capsicums are for aside from being nice in salads and certain curries.

green are tougher, and fry better. the reds are more delicate, but are also sweeter. i prefer my veg raw.

Lycopene: not a vitamin. Has no proven anticarcinogenic effect. You have been fooled by people with things to sell.
